feeling fruity......



HERE'S A RECIPE FOR CHUTNEY I STOLE FROM THE RESTAURANT I WORK AT IN EDINBURGH; 'THE DOGS'

6 cooking apples chopped
10 plums chopped
2 red onions diced
1 big red chilli chopped finely
250g sultanas
250g dried apricots chopped
250g dried figs or prunes chopped
400g mincemeat (the kind you use in mince pies!)
1 litre orange juice
100g demerera sugar
100ml sherry vinegar or red wine vinegar
salt and pepper

GET A BIG POT

1. SWEAT OFF ONION AND CHILLI IN VEG OIL
2. ADD ALL THE FRUIT, COOK DOWN UNTIL SOFT BUT NOT MUSHY
3.ADD ORANGE JUICE, SUGAR AND VINEGAR AND SIMMER FOR ABOUT 2 HOURS ON THE LOWEST HEAT POSSIBLE
(1 OR 2 FOR ELECTRIC)
4.TAKE OFF HEAT AND ADD SALT AND PEPPER TO TASTE!
5.OR COME AND VISIT ME AND I'LL GIVE YOU A JAR!
